Sodium Erythorbate (D-Isoascorbate Sodium)
Sodium Erythorbate, also known as D-Isoascorbate Sodium or Sodium D-Isoascorbate, is the sodium salt of erythorbic acid, with CAS No. 6381-77-7 and E-number E316. It is a widely used food grade antioxidant and color stabilizer, especially effective in meat, fish, beverage and fruit products. As an isomer of vitamin C, sodium erythorbate prevents oxidation, retains natural color, extends shelf life and maintains flavor without changing the taste of food.
